Gubbe and gumma are more endearing words that don't really mean "man" or "woman", often used for older people above the age of 50 at least, for children, or for someone you're comforting. It can be used for people who aren't old or children, but it can be seen as demeaning (especially "gumma" - using that towards girls/women can be seen almost as an oppressive and dominating move). But, like I said, gubbe and gumma refer to older people in a kind way, and that's what they mean in this context.
