You could get away with either but I think I actually prefer 'brains' as it's a ... whatchacallit.. a metonymy for his thinking - his 'smarts' if you like (but brains is better)

The 'would's feel a bit clunky - I'd just say "Every night he used..he used..." sounds fine. But you could have "he'd use" if you wanted to echo the imparfait in the French. Not really necessary though.
