As an English speaker "Remind me of how it could be" (Erinner mich daran, wie es sein konnte) sounds better, but the accurate translation is "remind me of how it can be."

Even in German the version of Erinner mich daran, wie es sein könnte - sounds more poetic. I think the problem is that is German it is a syllabus more.

"When my soul is gray, nothing makes sense any more" => "When my soul is gray and nothing makes sense any more"
Word order is important here, it's not "macht nichts mehr Sinn" but "nichts macht mehr Sinn" which makes it an enumeration or an implicit "when/if".
