I think "brains" or "brain" can be used in that expression, but I don't know what will sound better to a native. What do you think, [@Gavin]?

I'm not sure what line you refer to for "always been". The French rather means "he's a kind of chameleon [with] his brain(s) in his pants" but she doesn't say "with" out loud so I didn't either.
As for things like "he was a pretty boy", I think continuous past would not be appropriate. It's not about him changing his ways, it's her talking about him as a thing of the past.
Or did you have something else in mind?

You could get away with either but I think I actually prefer 'brains' as it's a ... whatchacallit.. a metonymy for his thinking - his 'smarts' if you like (but brains is better)

The 'would's feel a bit clunky - I'd just say "Every night he used..he used..." sounds fine. But you could have "he'd use" if you wanted to echo the imparfait in the French. Not really necessary though.
