I'll take my time reviewing the translation and your comments. And of course making changes. Frankly, when I attempted this one I knew I was biting off more than I could chew but ;) Sbagliando s' impara! Hey, there's a gerund used as a subject.

“I was biting off more than I could chew”: it’s a wonderful image! it is like the Italian “fare il passo più lungo della gamba”. But therefore my vote is more than deserved. :)
You are right, “sbagliando” is a gerund but the subject is the impersonal “si” as in English the impersonal “you” (you learn by making mistakes)
I checked the text and the transcription is right.
Yes, is English it's right. In Italian for this function is used the infinitive: IMPARARE è divertente. SBAGLIARE ti dà l'opportunità di imparare e crescere. etc.
