Jambalaya

Goodbye Joe, me gotta go, me-oh my-oh
Me gotta go, pole the pirogue, down the bayou
My Yvonne, the sweetest one, me-oh my-oh
Son of a gun, we'll have big fun, on the bayou

Jambalaya, and a crawfish pie, and filé gumbo
Cause tonight, I'm gonna see my ma cher amio
Pick guitar, fill fruit jar, and be gay-oh
Son of a gun, we'll have big fun, on the bayou

Thibodaux Fontaineaux, the place is buzzin'
Kinfolk come, to see Yvonne, by the dozen
Dress in style, and go hog wild, me-oh my-oh
Son of a gun, we'll have big fun, on the bayou

Jambalaya, and a crawfish pie, and filé gumbo
Cause tonight, I'm gonna see my ma cher amio
Pick guitar, fill fruit jar, and be gay-oh
Son of a gun, we'll have big fun, on the bayou

1. "pole the pirogue" - much like propelling a gondola, a pirogue is a small Cajun boat
2. "fill fruit jar" - a glass Mason jar, drinking moonshine or homemade alcohol usually out of them. Mason jars are used for 'canning' and people of meager means use them for food preserves and for drinking containers sometimes
3. "Thibodaux Fontaineaux" - although common Acadian names Thibodaux is a city of Louisiana, USA. Since the place is buzzin' (meaning buzy) and Yvonne is the attraction it appears to be a club, Hank Williams was well known for that life.
4. There are many references to food there; jambalaya, crawfish pie, file gumbo
5. "pick guitar" - to play one with a pick
