[1] Shenkin street and Florentine neighbourhood are two areas of Tel Aviv stereotypically identified with a kind of sophisticated, hipster urban culture - the opposite of Sarit Hadad's simple, small-town image celebrated in this song.
[2] Brilliantine used to be kind of a generic term for hair gels long ago. Presumably, it's here to hint at hairstyles you could find on Tel-Aviv based female rock singers, but would never pass in the conservative areas Sarit Hadad comes from.
[3] Hilton and Dan are fancy hotels in Tel-Aviv (and elsewhere).
