"If I were to leave you" should be translated as "Si te dejara", using the imperfect subjunctive of the verb "dejar".
"No matter what you do" should be translated as "no importa lo que hagas", using the present subjunctive form of the verb "hacer".
"Fall in love with" translates into Spanish as "Enamorarse de", therefore "I will never want to be in love with anyone but you", should be translated as "Yo jamás quiero estar enamorado de nadie sino de ti".
Your Spanish actually seems good for the most part, you seem to know basic Spanish grammar well.
